This omelette is made with onion, moringa leaves (drumstick leaves) and green chillies.

These eggs are from free range chickens on a friends' farm. They're huge. The lid on the box wouldn't close properly. When I got the eggs, my friend said that she has a whole new respect for her chickens. She can't believe the size of the eggs coming out of those little chickens. She KNOWS when they are laying because they really squawk....

Roll out chapatis and cook them on a tava. Finish cooking them by puffing them up on a rack. Put the cooked chapatis on a covered plate in warm oven while making the omelette. (See more photos of cooking flatbread on the stovetop.)




To make the omelette, sauté onion and moringa leaves in oil until the onion is just starting to colour.

Add green chilis and cook for another half minute. Then pour in beaten eggs and cook until done. Fold the omelette over just before serving.

Garnish with coriander leaves (aka cilantro) and serve with chapatis.
