Palak paneer (aka saag panir with many and various spellings) is Indian-style spinach with fresh cheese (we like Nanak brand). It is one of the most wonderful inventions. I have crossed oceans just to eat great palak paneer...
The cheese is fried in butter (it holds its shape) then cubed and dropped into the spinach just before serving.

Serve palak paneer with naan and garnish with coriander leaves (aka cilantro) if you have them. Palak paneer is great with butter chicken.
Palak paneer and naan are equally delicious with rogan josh. Pickled onions and carrots are a great palate cleanser. Palak paneer also goes very well with chole (chickpeas).
