Portuguese Corn Bread - a quest

One of my favourite kinds of bread is Portuguese corn bread. It is soft and moist inside with a lovely nutty flavour. There is a Brazilian bakery not far away that sells it but I thought I'd try making it myself using a slightly modified version of a Gourmet recipe. (The resulting bread is good but it's not at all the same as the Brazilian bakery's bread.)
