My son and I watch the Food Network together occasionally and often see things we think we'd like to try. Both of us loved the look of bravo! Chicken with Squash and Gorgonzola. bravo! At the farmers' market this morning, there was a stand selling particularly lovely squashes. We looked at each other and both thought immediately of the recipe we had seen on TV.

It was divine. bravo! I used Boursin cheese (I had no gorgonzola) and since MrBrown is not eating dairy products right now, I made some sauce without the cheese. I'm not sure which version I like better.

We also had green beans from the farmers' market and rice with green onions and fresh rosemary. A delicious dinner. We all cleaned up our plates and looked sadly at them wishing there were more food. One of us was looking for the ice cream that wasn't there so made do with a kitkat bar.

mmmmmm that butternut squash sauce sounds fantastic! I haven't noticed winter squashes at the market yet but will watch for them. We HAVE to try that. I think we'll get gorgonzola too. (I love gorgonzola)

For the sauce without the cheese, did you just leave out the cheese from some of the squash mixture, or did you make something entirely different?

I took out some of the sauce before I added the cheese and put it in a separate pan. I added cheese to what was left. "Sauce" is a bit of a misnomer; it doesn't spread like I think a sauce generally spreads. It more sits on top of the chicken in a pile.
