Pork chops, peaches and garlic on a bed of couscous
Before frying this pork chop, I first sauteed onion, garlic, red pepper, zucchini, Asian eggplant, green beans and fresh peach slices. I then added the chop (rubbed with mustard).
Once the pork chop was done, I deglazed the pan with a little red wine, then served the whole thing on a bed of couscous.
Couscous is good with chicken, Prunes and apricot too.
