By trial and error, we discovered that it was easiest to shape the cookies by pinching the corners together before putting in the filling of plum jam (This shaping method is very similar to the one for making Assyrian Spinach Pies.).
Here they are just out of the oven.
Duh. We forgot to wet the edges before pinching them shut. So, we had a little difficulty with some of cookies losing their shape in the oven. They still tasted great though.
